シュペッツレ

My gran always used to make her own Spätzle. Hand-scraped and absolutely delicious. Spätzle are a Swabian speciality that are very easy to make.

You can serve them as a side dish or as a main course, such as Käsespätzle.
Ingredients

400 g flour
4 eggs
200 ml water
1 tsp salt

Step 1:

Place all the ingredients in a bowl and mix with a whisk or in a food processor until you have a smooth, supple dough.

Step 2:

Leave to rest for about 15 minutes to allow the flour to swell slightly.

Step 3:

Bring a saucepan of salted water to the boil. Set aside another saucepan filled with cold water.

Step 4:

Place the dough into a pasta press and press it into the boiling water. Turn the heat down to a low simmer so that the water is just gently bubbling. When the spätzle float to the surface, leave them to cook for about 2 minutes, then remove them from the water using a hand sieve. Immediately plunge them briefly into the cold water and drain. Transfer them to a plate or bowl. It’s best to cover them with aluminium foil to keep them nice and warm.

Step 5:

Repeat the process until all the dough has been used up. The spätzle are then ready to serve. Alternatively, you can scrape the spätzle into the boiling water using a chopping board and a spätzle grater or dough scraper.
